  1. 2 cups veggie mix
  2. 6-8 eggs (enough to cover mix)
  3. shredded cheese (optional)
  4. salt and pepper to taste
  1. Preheat the oven to 400 degrees.
  2. In a large cast iron skillet (or any oven-proof skillet that is well-greased), sauté veggie mix until softened.
  3. Season generously with salt and pepper—since the vegetables will be mixed with the eggs, you want to over-season them a bit. Get creative*
  4. Spread the veggie mix in an even layer on the bottom of the pan.
  5. Add cheese in a single layer if using, and let it begin to melt.
  6. Whisk the eggs together in a separate bowl, and pour over the veggies.
  7. Tilt the pan a bit if necessary to make sure the eggs spread evenly over the vegetables.
  8. Cook for a few minutes, or until you see the edges of the egg mixture begin to set.
  9. Put the entire pan in the oven and bake for 8-10 minutes or until the eggs are set.
  10. Check for doneness by cutting a small slit in the center of the frittata.
  11. If raw eggs run into the cut, bake for a few more minutes.
  12. If the eggs are set, pull from the oven and cool for five minutes.
  13. Slice into wedges and serve.
  1. * perhaps smoked paprika, ground cumin, turmeric, or oregano might be good?
  2. Leftovers should keep for a week.
